Full Plate

Well, since I'm certain you are all wondering about last night...I will share this only. My 11yo is broken-hearted but is already starting to understand the potential good which will come of it. Doesn't mean the pain is over but I feel like MAYBE some healing has begun...our Heavenly Father is so good to do that.

The scab is beginning to harden on the wound…how’s that for a visual? Can you tell I live with boys?

I may write more about it at a later date but my heart is broken for him and I can hardly think about it either.

And I’m a little tired of crying.

But on to more shallow things...that's what we're all here for, right?

I'm certain when you saw the title, you thought I might be talking about food again...and I wasn't planning on it, but since you were expecting it (and I like to fulfill people's expectations if reasonable), I do want to mention that I'm trying a new recipe for dinner tonight: Crispy Quinoa Burgers with Flaxseed.

Sounds tasty, right?

No, no, not everyone at once. I promise to share the recipe. In fact, I shall do it right now:

Crispy Quinoa Burgers with Flax Seed
2 1/4 cup cooked quinoa
1/2 cup of kidney or black beans
3/4 cup shredded cheese of choice
1 tablespoon cream cheese (can be omitted)
2 eggs
2 green onions
2 tablespoons white onion, chopped
1/2 cup carrot, shredded
2 cloves garlic
1 teaspoon chili paste or hot sauce
2 tablespoons whole wheat flour
1 tablespoon flax seed or ground flaxseed
1 tablespoon sugar
1/2 teaspoon salt
1/2 teaspoon curry powder
1/4 teaspoon black pepper

Makes 8 Patties

First you need to cook your quinoa. Don't be afraid! It is very similar to rice. First rinse and drain one cup of quinoa. Heat two cups of water in a medium saucepan until boiling then add rinsed quinoa. Reduce to a simmer, cover and simmer for 15 minutes, or until all the water is absorbed. Let rest for 5 minutes, then remove lid and cool. 

Next grate your cheese, chop your onions, mince your garlic, grate your carrot, and slice your green onions. Set aside. 

Using you beans of choice (I chose dark red kidney) and a fork, mash into a chunky paste. This really helps glue your burgers together.


In a large bowl add chopped vegetables, beans, eggs, cream cheese, shredded cheese, flour, sugar, flax seed, hot sauce, and all spices. Stir to combine.

Next add your cooled quinoa. Must be cooled or the cheese will melt now, instead of in the pan. Stir mixture until completely uniform. 

In a large pan, heat 2 tablespoons of olive oil. Using hand, form 1/2 cup portions of quinoa mixture into patties and place into hot pan. Cook for 3-4 minutes on each side, or until golden brown. 

Please keep in mind: at the time of publishing, this recipe was untested in my kitchen. I cannot confirm or deny the deliciousness of it.

In fact, I shall probably report back once dinner has been eaten. I will say that the Boca Burgers (and I'm not joking here) received rave reviews last night. No, we are not becoming vegetarian (“Not that there’s anything wrong with that…”  Anyone? Reference for that quote? You guys are letting me down on these…I would like some attempts to identify them…even if they are wild stabs. I’ll take it.)

I’m actually just trying to increase my comment numbers…makes me look more popular than I actually am.

Anyway…the REAL reason, which has nothing to do with food…sorry to disappoint…for my post title is this:

Today I took my 10yo to SciFi vs Science camp downtown, while a friend took his son and my 11yo to their robotics camp.

We’re all nerd, all the time around here. (Or as my 10yo has taken a liking to: “Come to the Dork Side…we have Pi.”)

If you didn’t laugh out loud right there, I’m really not sure that this blog is for you.

So…I took the 10yo to camp…his camp is from 9-3. The 11yo’s camp is from 9-12. They are not on the same side of town. With gas prices being what they are, it doesn’t make sense for me to go home from downtown and then an hour later turn around to go pick up the 11yo (and his friend). So instead I schlep a bunch of stuff with me while I sit and wait.

It’s fine. I am more productive there than I am at home…getting all distracted by writing a blog and such.

So…today after we dropped off the friend at his house, I was relaying the afternoon’s festivities to my son:
  • Go home and eat lunch
  • Go to the gym
  • Pick up your brother
  • Go to Steak N Shake Drive through for Happy Hour Milk Shakes (yes, I am a stress eater…don’t judge)
  • Pick up Indy from the groomer; your brother and I dropped him off this morning

So FIVE MINUTES LATER (if even that long), we got home and I went to Indy’s cage to let him out.

Yes, my astute readers, you already know where I’m going with this. If you don’t know…keep reading. It will soon be revealed.

After a frantic search, which seemed to last for minutes, in which my 11yo and I were yelling for Indy, searching high and low, hearts pounding…it occurred to me why his cage door was open and he was apparently missing.

Perhaps I have too many things on my plate.


But doesn’t Indy look “handsome” after his visit to Groomer Gregg?

And HOW is he sitting like that? I do not understand the WHY or the HOW… (HOW he is sitting that way, and WHY we chose him...)

Editor's Note: Quinoa Burgers were more like "Sloppy Quinoa" as Mr. Always Random dubbed them...the patties didn't really hold together as a patty, but still were well-received by three out of four of us. The fourth family members said, "Yeah, it's pretty good." That's enough for me to make them again...especially since the recipe made 8 so we have enough for leftovers.

    Hilarious that you went looking for the dog. I'd be surprised that the 11yo went looking, too, seeing as how you just told him. But then I remembered, he's 11. They don't listen to moms listing schedules. :)

    That photo of Indy could go viral with all sorts of funny sayings, just like that ugly cat. Get on it.
